Check the document and/or printer configuration files in
<X-path>/server/etc/XpConfig/C/print/attributes/
Since I alway print from the default tray, with lette size paper, I have:
*default-medium: na-letter

in attributes/printer. To support multiple trays, you have to defin th
trays and supported sizes in the model-config file for the correct
driver, like models/PSdefault/model-config

No, much easier to change the document defaults.

Xprint reall comes into it own when you configure all you printers
manually, instead of using the automatic/default settings. Especially if
you have more than one printer. Using the Xprinters file and
attributes/printer, you can setup each printer individually, including
which tray has what paper.
